Waqu, Crows Nest
This is engineered food with a Japanese slant - technique driven with all the soils, powders, gels and foams that would make a lab technician faint. Sometimes the fancy goes a bit too far and whilst all dishes are quite pleasant, they ultimately lack a bit of soul. A bit like the wait staff.
The most successful courses are in fact the simplest: perfectly pink Tajima Wagyu flank steak is gloriously juicy with nothing more than a simple salad. Yum.
One thing it doesn’t lack is value, especially at lunch where $55 gets you 5 finely constructed courses. Don’t forget your Entertainment Card to amp up the value even further. You could do much worse.
